Operations Using Too Much Server Resources [5.1.0-RC1]

I'm using 510-RC1 on Rome, and I was wondering why some usual operations where taking sooo long to achieve, and I inspected deeply the problem.
For example, when use the "up/down" function in categories, I have on the server:
PID USER PR NI VIRT RES SHR S %CPU %MEM TIME+ COMMAND 13572 mysql 16 0 557m 162m 4800 S 90.2 8.0 131:38.74 /usr/libexec/mysqld --basedir=/usr --datadir=/var/lib/mysql --user=mysql --pid-file=/var/run/mysqld/mysqld.pid --skip-external-locking --socket=/var/lib/mysql/mysql.sock
The process is using 90% of the server, and this last for about 25-30sec. before ending. For an Ajax-managed menu, this is very strange to me, any idea on this? Theme scanning takes 83,2% for itself, and so on...
Maybe there's an admin option I don't know?
